GINGERBREAD 1 1/2 c all-purpose flour 1/2 c shortening 3/4 tsp ginger (ground) 1/4 c packed brown sugar 3/4 tsp cinnamon 1 egg 1/2 tsp baking soda 1/2 c light molasses 1/2 tsp baking powder 1/2 c boiling water 1/2 tsp salt Grease and lightly flour a 9-inch cake pan. Combine flour, ginger, cinnamon, baking soda, baking powder, and salt. In a mixer bowl beat shortening at medium speed for about 30 seconds. Add brown sugar and beat until fluffy. Add egg and molasses; beat for 1 minute. Add dry ingredients and water alternately, beating after each addition. Turn into pan. Bake at 350 for 30 to 35 minutes or until gingerbread tests done. Cool 10 minutes in pan. Remove from pan and serve warm.
